Heart-Healthy Cooking: Enjoy Delicious and Nutritious Meals

Chef Thomas Wenger's new cookbook highlights the joys of cooking heart-healthy dishes without sacrificing flavor.

Thomas Wenger, a Swiss-born chef with a remarkable culinary career spanning over 45 years, has launched a new cookbook titled Cooking for the Heart. This unique collection arises from his personal journey with heart health, showcasing how one can enjoy wholesome food without compromising on flavor.

A Culinary Journey Reshaped

Chef Wenger's extensive experience includes working in renowned hotels and restaurants worldwide, including a notable stint in the Philippines. However, a significant heart issue he faced in 2025 prompted him to overhaul his eating habits. Following medical advice to lose weight and eliminate certain foods, he embraced cooking with a new perspective.

"While I still desire to eat well, I had to modify my diet and lifestyle, cutting back on sugars, saturated fats, and salt," Chef Wenger explains. His childhood love for vegetables became an ally in this transition.

Principles of Flavorful Health

Wenger’s approach to heart-healthy cooking revolves around three essential principles: utilizing fresh and seasonal ingredients, maintaining nutritional balance, and ensuring that each dish remains delicious. Through his creative experimentation, he has created over 45 recipes that demonstrate how healthful meals can still be incredibly satisfying.

The cookbook is organized into various sections inspired by global markets—from the spice markets of Asia to Mediterranean and European delights, featuring fresh produce from the Baguio region in the Philippines.

Freshness at the Core

Wenger’s passion for fresh ingredients stems from his upbringing in Switzerland, where he enjoyed a bountiful garden filled with seasonal fruits and vegetables. He emphasizes that eating in sync with the seasons enhances flavor and nutrition. "During peak seasons, produce is at its best, offering the juiciest, most flavorful results that translate into delicious meals," he notes.

His culinary inspiration echoes Mediterranean traditions, which focus on lighter cooking methods, nutrient preservation in vegetables, and the use of olive oil instead of butter. He adeptly incorporates these principles into his interpretations of Asian and Oriental cuisine.

Rediscovering Old Favorites

Although Wenger adjusted his food choices, he did not entirely abandon his beloved dishes. Instead, he found healthier alternatives while discovering new favorites. “I didn’t give up my favorite dishes completely,” he remarks. “I just reduced their frequency and learned to appreciate them in different ways.”

Living in the Philippines for over two decades has deepened his appreciation for local flavors. He enjoys various Filipino dishes that align with his dietary needs, particularly seafood and vegetable-centric meals. Some of his favorites include eggplant dishes, grilled seafood, and the famously tangy sinigang.

Innovative and Tasty Recipes

Among the standout recipes in Cooking for the Heart is the Sinigang Glazed Black Cod served with a kamias-tomato broth, showcasing a beautiful blend of local ingredients. Other tempting creations include:

  • Japanese-Inspired Squid Salad with Green Tea Noodles
  • Thai Crabmeat and Pomelo Salad
  • Spicy Moroccan Chickpea Stew with Saluyot
  • Roasted Grouper Fillet with Edamame-Kale Purée

Even desserts have a place, with options like Baked Apples featuring nuts and dried cranberries rounding out the flavorful offerings.

A Personal Touch

Wenger took a hands-on approach to creating his cookbook, photographing and documenting the recipes himself, culminating in a project that reflects his personal journey with food. His physician, Dr. Sue Locnen, has praised Wenger for effectively transforming medical guidance into enjoyable and wholesome meals.

With a forward by acclaimed chef Richard Ekkebus emphasizing the significance of mindful eating, Wenger's philosophy remains unwavering: good food is essential for both joy and health. “Eating well is as important to me now as it has always been,” he states.

Cooking for the Heart serves as a reminder that embracing heart-healthy cooking does not mean sacrificing pleasure. Instead, it's about discovering new, delightful ways to savor delicious meals that nurture the heart and body.
